Smaller than a pie but twice as yummy! You only need two cups of berries for this summer treat!
This photo was taken before it was sprinkled with sugar or baked. I rolled my crust too thin in one part and it split so some juice leaked out.
Strawberry Galette
2 cups fresh sliced strawberries
⅓ cups sugar
2 tbsp tapioca
1/4 tsp lemon peel or zest
Dash of salt
½ tsp milk
turbinado sugar for sprinkling
1. Preheat oven to 375°F.
2. Combine sugar, tapioca, lemon peel, and salt. Don't mix in the strawberries until ready to assemble the galette, otherwise they might become to juicy to easily fold up the sides of the galette.
3. Roll out pie crust to a 13in circle. Place rolled out dough onto a sheet pan lined with parchment paper. Mix strawberries into the sugar mixture.
4. Spoon the strawberry mixture into the middle of the galette, leaving at least 2in all around to fold up the dough.
5. Fold part of the dough up over the strawberries, repeat on the remaining sections of dough to form a hexagon or desired shape. You may need to refrigerate the dough again if it is too soft to fold the sections up.
6. Brush ½ tsp milk over the top of the galette crust to moisten, then sprinkle with course sugar like turbinado sugar.
7. Bake for about 35 min or until crust is starting to brown and the filling is thick and bubbly. Let cool to room temperature.
8. Serve and enjoy!
I was having a hankering for some pie, but I didn't have enough berries to make one. Luckily enough this galette only takes about two cups of berries! In my opinion galettes are even easier than pie, there's no fuss with crimping or covering it with another crust. You just fold the sides over however you please and it's ready to be baked. Plus it's impossible for them to look bad because no matter what happens you can just say it's a rustic dessert.
This recipe tastes amazing. My brother, who is notorious for scarfing down his food, said this was so good he wanted to take his time to savor it. I was shocked, and pleasantly surprised how an afternoon whim turned into such a delicious treat.
