Warm, gingerbread spices lend themselves well to a wintery breakfast treat. This recipe makes about 8 to 9 small, 4 inch waffles.
Ingredients
1 cup flour
1 tbsp. granulated sugar
2 tsp. baking powder
½ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. ground ginger
⅛ tsp. cloves
1 egg
¾ cup milk
3 tbsp. melted butter
2 tbsp. molasses
½ tsp. vanilla extract
Method
Preheat the oven to 200°F. Plug in and preheat the waffle iron.
In a medium bowl, whisk together flour and the next six ingredients (through the cloves).
In a separate medium bowl, whisk together egg and the next 4 ingredients (through the vanilla extract).
Fold the egg mixture into the flour mixture being careful not over mix. It's fine if there are some small flour pockets in the batter.
Spoon 2 to 3 tbsp. of batter into each waffle mold depending on the size of your waffle iron. Cook for 2 to 3 minutes or until waffle is puffed, slightly browned and holds it's shape when removed from the iron.
As waffles are done cooking, keep them warm in the preheated oven until ready to serve. Enjoy!
Note: My waffle iron is non-stick and the butter in these waffles keep them from sticking to the iron. Unless you have a very "sticky" waffle iron it is unlikely it will need to be greased.
Winter is a long haul. Short days, cold temperatures, and dreary skies are not what I consider to be morale boosting. Waffles, on the other hand, are an excellent way to start the morning on the right foot. Warming spices and molasses put a wintery, cozy spin on waffles. As pictured below, I enjoyed these with banana slices and maple syrup. I imagine these would also be quite tasty topped with a winter fruit compote or apple butter.
