Pumpkin Pie Crumble Bars

An ~essential~ fall treat in bar form



Crust and Topping

  • ½ cup melted butter

  • 1½ cup all purpose flour

  • ½ cup brown sugar

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 tsp cinnamon

  • pinch of cloves


Pumpkin Pie Filling

  • ¼ cup brown sugar

  • ¾ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ground ginger

  • ⅛ tsp cloves

  • ¼ tsp salt

  • 2 eggs

  • ½ tsp vanilla extract

  • 1¼ cup pumpkin puree

Assembly

1. Preheat the oven to 350°F. Grease an 8" x 8" pan and set aside.

2. For topping/crust mix together everything but the melted butter. Mix in butter until the mixture forms coarse crumbs.

3. Reserve about ¾ cup of crust for the topping. Press the remaining crust evenly into the bottom of the greased pan. Set aside

4. In a medium bowl mix together brown sugar, spices, salt, vanilla, eggs. Mix in pumpkin.

5. Pour pumpkin mixture into the pan, spreading evenly over the crust. Bake for 15 minutes.

6. Remove from oven and sprinkle the remaining topping evenly over the top. Bake for 20-25 more minutes or until golden brown and center set.

7. Cool for 1 hour, then refrigerate to finish setting.


Thanksgiving is just around the corner so what better time to make a variation on pumpkin pie. We had a HUGE crop of pumpkins from our garden this year, and have been using fresh pumpkin in all sorts of ways! We've had it in soup, stew, corn bread, cake, pie, bar, and cookie form. This recipe was developed using fresh pumpkin puree which is a bit sweeter, and has a slightly higher water content than canned pumpkin puree. If making this using canned pumpkin you might need to bake it for slightly less time and use about ⅛ to ¼ cup more sugar based on your sugar preferences. Depending on how ~spicy~ your pumpkin pie tastes are, consider bumping the cinnamon up to 1 tsp. and the nutmeg up to ½ tsp. in the filling. I love lots of spice in everything and enjoyed the variation with more spice, but my brother likes less spice in his pie and preferred the spices as written.
