Chocolate chips in a chocolate cookie base are complemented by chocolate-coffee frosting.
Yield: ~3½ dozen cookies
Cookies
1½ cups flour
½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
¼ cup shortening
¼ cup softened butter
2 oz. unsweetened chocolate
1 cup brown sugar
1 egg
½ cup buttermilk
1 tsp. vanilla
¾ cup chocolate chips
Mocha Frosting
¼ cup softened butter
2 tbsp. cocoa powder
1 tsp. instant coffee
1 tbsp. coffee
2½ cups powdered sugar
1 tsp. vanilla
1-2 tbsp. milk
Assembly
Preheat the oven to 350°F and grease a cookie sheet.
In a saucepan over low heat melt butter, shortening, and unsweetened chocolate.
While the chocolate mixture cools slightly, in a large bowl stir together flour, baking powder, baking soda, and salt.
Stir brown sugar, egg, buttermilk, and vanilla into the chocolate mixture. Pour the chocolate mixture into the flour mixture and mix well. Stir chocolate chips into the batter.
Drop tablespoons of batter 2 inches apart on the greased cookie sheets. Bake for 10 minutes. The cookies should be soft but set when you pull them out of the oven.
Let the cookies cool for a minute or two before transferring to a wire rack.
Once the cookies are cool make the frosting. Beat together butter, cocoa, and instant coffee. Beat in coffee, powdered sugar, vanilla, and enough milk to make the frosting a spreadable consistency.
Spread each cookie with an appropriately sized dollop of frosting according to your frosting needs. Enjoy!
Sometimes, chocolate is a dietary necessity. These cake-like cookies are a great way to fill a chocolate need when it strikes. The cookies are relatively small so you can enjoy one as a tiny treat or many as some self care! I adapted this recipe from an old Better Homes and Gardens cookbook. Originally, the recipe called for all shortening. I like the super soft cookie texture shortening gives, but like the richness that butter brings so this recipe uses half butter, half shortening. If you don't have either butter or shortening, just use ½ cup of what you have! The cookies will still be delicious.
The frosting on these cookies isn't necessary but it sure is tasty. The coffee flavor of the frosting brings out the chocolate flavor of the cookie. Dusting the cookies with powdered sugar is also an option. However, if not making the frosting I would suggest adding a teaspoon or two of instant coffee or espresso to the cookie batter to help bring out the chocolate flavor.
